This pizza was inspired by all my favorite ingredients. I pretty much just pulled everything I like out of the refrigerator and stuck it on a pizza crust. The full, technical name for it is the “Caramelized Onion-BBQ-Chicken-Bacon-Goat Cheese Pizza”…but that wouldn’t fit in the title space. The best part? I make in on the grill. So it’s actually “Grilled Caramelized Onion-BBQ-Chicken-Bacon-Goat Cheese Pizza.” You can make in the oven by baking it at 425 degrees fahrenheit, but that isn’t nearly as fun.
BBQ Chicken Bacon Pizza
One Boboli pizza crust
One large chicken breast, sliced into medium chunks and fully cooked
12 slices of bacon, cooked completely and chopped into one-inch chunks
Half an onion, sliced thinly
3 ounces goat cheese
1/4 cup spaghetti sauce or tomato paste
1/8 cup BBQ sauce
2 Tbsp olive oil
Sautee onions for half an hour until caramelized, adding water every few minutes to avoid burning. See my post on how to caramelize onions for detailed instructions.
Preheat BBQ on high for five minutes, then turn down to low. Brush olive oil onto both sides of pizza crust and cook pizza crust on open BBQ for two minutes each side.
Top pizza with tomato sauce, cooked chicken breast, cooked bacon, caramelized onions and goat cheese. Drizzle with BBQ sauce. Close BBQ and cook for five to ten minutes (this will vary depending on your BBQ). Watch closely after five minutes, checking crust every minute to ensure that it doesn’t burn. Pizza’s done when crust is crispy.
Slice and serve. This dish will really impress at a family BBQ. You can pick up a few Boboli crusts, get all the ingredients cooked and sliced beforehand and easily whip this bangin’ BBQ pizza out in about ten minutes.
