I’m already having summer withdrawals. I like to incorporate BBQ sauce in my off-the-grill recipes to spice things up and get the flavor I want even when I can’t go out and have a barbecue. These please everyone and they’re easy to cook up fast in just one skillet. I love entrees that don’t create a lot of dishes for me to clean up later!
BBQ Chicken Sliders
3 chicken breasts
1 onion (white or yellow)
1 Tbsp olive oil
3 Tbsp BBQ sauce
Miniature buns or Oroweat Sandwich Thins Minis (we use the whole wheat variety to make this dish healthier)
Sliced cheddar cheese (optional)
Heat the olive oil over medium heat. Dice onions and sauté for 5 minutes.
Meanwhile, use the back of a heavy skillet or a rolling pin to smash the chicken breasts a bit and get them evenly flat. I cover a rolling pin with plastic wrap so I can simply peel it off and I don’t have more dishes to do. It’s all about minimizing the dishes.
Cut each chicken breast into three slider-sized pieces. Add to the skillet with the onions and drizzle with BBQ sauce. Cook over medium heat for 4 minutes, turn the chicken and cook for another 3 or 4 minutes.
Place chicken onto buns (add mayonnaise if you like). Top with sliced cheese and onions with barbecue sauce from the pan.
