I don’t usually start out with an exact idea of what I want to cook for dinner. I browse recipe sites and get super-giddy over inventive entrees. Those recipes then go through several iterations in my mind. Sometimes they even come full-circle as I work through ingredients I have on hand, time limitations or taste preferences. These easy chicken lettuce wraps are a good example: they went from a chicken wrap concept to a stuffed breast to easy chicken lettuce wraps before I even started cooking. I discovered these delicious Summer Chicken Wraps on Tyson’s site, but had planned to just stuff the ingredients inside the chicken as opposed to adding carbs to it with a tortilla wrap. Then I headed to Walmart and could only find the sliced version of the Tyson Grilled & Ready chicken breasts I wanted to work with. It’s pretty difficult to stuff chicken that’s already been sliced. Sooo we were back to the wrap idea again!
Easy Chicken Lettuce Wraps
In the end, the best recipes usually come down to just a few high-quality ingredients. I often nix extra spices and additives in favor of simple, flavorful components that pack a lot of punch with minimal effort. In this recipe, goat cheese and sun-dried tomatoes offer excellent texture. Freshness comes from the crisp lettuce, easy flavor from the balsamic vinegar and the meaty base of the meal comes from everyone’s favorite dinner standby: chicken!
- Two packages Tyson Grilled & Ready Chicken
- Several large leaves green lettuce
- ¼ cup goat cheese, crumbled
- ¼ cup sun-dried tomatoes
- 4 Tbsp balsamic vinegar
- Warm the Tyson Grilled & Ready Chicken in a skillet on medium-high for about three minutes.
- Spread sun-dried tomatoes over washed lettuce leaves.
- Add chicken on top of the tomates.
- Crumble goat cheese over the top.
- Drizzle with balsamic vinegar.
- Wrap the top of the leaf over the rest of the ingredients and serve.
Extremely fresh lettuce is a must for this meal. For easy chicken lettuce wraps, it’s important that you get a nice crunch from the leaves. Soggy lettuce is a no-go.
I used to grill my own chicken breasts weekly to have on hand, until I discovered these refrigerated packages of Tyson Grilled & Ready fully cooked chicken breast strips. I like to buy the lightly flavored ones, so I can add my own spices and decide on a whim what flavor meal to serve. They also have pre-spiced ones available to make life even easier.
Keeping fully-cooked chicken in the refrigerator is such an easy meal solution. Once cooked, it only takes a couple minutes in the skillet to heat back up and be ready to serve.
I use sun-dried tomatoes kept in a jar with olive oil, but any kind will work.
Goat cheese is one of my go-to favorites for bold flavor.
Balsamic vinegar pairs perfectly with goat cheese. And with such a strong mediterranean flavor, a little goes a long way.
The most difficult thing about these easy chicken lettuce wraps is containing all of that deliciousness. I like to use green leaf lettuce because the big leaves fold over into a wrap rather easily. I always serve mine open and leave the folding part up to my guests. Or, you can just slice the leaves and toss it all together for a salad.
