Everyone raves about barbecued meat in the summer, but I don't see a lot of people taking advantage of the opportunity to make grilled vegetables! Why pull out any pots and pans inside the kitchen when you can create an entire meal with the magic of your backyard barbecue and a little oil? Here's how it's done in our home.

Grilled Vegetables with a side of Meat!

Top Sirloin with Grilled Avocados and Red Onions
Ingredients
  • 1 1/2 pound top sirloin steak tenderized
  • 1 large red onion sliced into 3/4-inch rings
  • 2 ripe avocados halved and pitted
  • Pompeian Grapeseed Oil or OlivExtra Mediterranean Blend for drizzling
  • 2 garlic cloves minced
  • Salt and pepper to taste
  • A pinch of cayenne pepper
Instructions
  1. Preheat your grill to medium-high heat.
  2. Drizzle onion with oil and toss with salt and pepper.
  3. Slice each side of the steak against the grain with a steak knife and rub with a blend of the garlic and approximately 2 Tbsp oil.
  4. Grill onions and steak 4 minutes per side and transfer to a plate.
  5. Rub cut side of avocados with oil and grill, cut side down, for 30 seconds.
  6. Sprinkle avocados with cayenne pepper and lime and serve immediately.

We tenderize our meat by just throwing it in a bag with some tenderizer and refrigerating it for about an hour.

It's helpful to cut the onion rings large and keep them in tact as much as possible for easy grilling.

Don't overheat the avocados or they'll get mushy. 30 seconds is all it takes.

Oma and Opa came over to watch the kids while we went out for our anniversary dinner, so we got everything ready for Opa to man the grill. No babysitter goes unfed in this house! He said that the oil and garlic smothering the steak was the perfect touch.
