I used to buy bran muffins at the store on almost a weekly basis. Then I thought to myself: Self, you should really make your own bran muffins. You’ll save money, and how hard can it really be to find a healthy bran muffin recipe? Fortunately, my trusty mother-in-law had one on hand.
Healthy Bran Muffin Recipe
1 1/4 cup unprocessed bran
1 cup toasted wheat germ
1 cup brown sugar
2 1/2 cups whole wheat flour
2 1/2 teaspoons baking soda
1/2 teaspoons salt
2 eggs, slightly beaten
1/2 cup honey
1/4 cup molasses
1/2 cup vegetable oil
1 cup boiling water
2 cups buttermilk
1) In large bowl, combine bran, wheat germ, sugar, flour, baking soda, salt. Set aside.
2) Combine eggs, honey, molasses, oil, buttermilk, boiling water. Mix well with dry ingredients.
3) Spoon batter into greased muffin tins 2/3 full.
4) Bake at 350 degrees for 20-25 minutes.
I get the bran, wheat germ and whole wheat flour at Henry’s. If you have a hard time removing the bran muffins from their muffin tins (or if you’re wondering why half my bran muffins are upside down in the above photo), here’s my trick:
Run the dull side of a butter knife around the edge of each bran muffin, lifting up slightly against the edge of the bran muffin to pop it out of place when you’ve circled it entirely.
After loosening all muffins, tip the muffin tip upside down to remove all the bran muffins.
Voila! This healthy bran muffin recipe already makes a relatively large batch (about two dozen), but I usually double it, stick the extras in large ziplock bags, and freeze them for another week.
