I love salad, but sometimes the thought of a cold, crisp iceberg variety just doesn’t sound appealing on a chilly winter night. This hot spinach salad features a hot, tangy dressing and bacon crumbles for a salad that’s more satisfying comfort food than traditional light fare.
Hot Spinach Salad
1/4 cup vinegar
2 Tbsp water
5 slices bacon
1 bunch spinach
Fry bacon and remove from the pan.
Add all other ingredients to the bacon drippings except the spinach, and heat to a boil.
Spoon the warm dressing over clean, torn spinach leaves.
Crumble bacon on top.
