Nate and I have quite a torrid history with desserts. On one of our very first dates I brought Nate a piece of cake, just to be nice and surprise him. He claims that’s the moment he fell in love with me. It obviously didn’t end there! A short time later, we discovered an amazing little ice cream place down the street from our apartment, which we started visiting weekly for the next three years.
We’ve traveled around and had fancy desserts. Alaskan desserts. Hawaiian desserts.
We’ve seen dessert trends come and go. Restaurant cotton candy, anyone?
And then we got married (with dessert). And suddenly, things changed.
We had kids. And now, we don’t really go out for dessert anymore. Go figure.
How we do it now: Desserts at Home
I miss my sweets. So once in awhile, I go ALL out and I make a boxed cake. Shhhh, don’t tell anyone. Boxed cake is totally my secret. I make us a cake about every month or so for a special treat. It’s my go-to way to get the perfect end to the perfect meal. No special equipment or much time needed. I cut the leftover pieces in half and turn them in on themselves to sandwich the frosting in the middle and make a convenient hand-held cake slice in a baggy for Nate to take to work with him.
When I’m feeling extra-fancy (and even shorter on time), I’ll turn that boxed cake on its head and make an upside-down cake. They always look like you went to a lot of effort, and everyone oooohs and aaaaahs over them. How do I do this even faster than a traditional cake?
