While I seriously enjoy a good hamburger or salami sandwich, I wasn’t always a big meat lover. I lived a strict vegetarian lifestyle for 13 years. During that time I built up an intensive repertoire of favorite meatless meals. This pregnancy I’ve developed a pretty severe aversion to certain meats, running Nate out of the house in search of his usual chicken and fish dishes. Beware the pregnant spidey sense of smell!
It’s fortunate that I have so many meatless meals to fall back on. Those years of experience have helped me prepare hearty food and keep the whole family satisfied for the last few months.
Meatless Meals for Everyone
Pregnancy has me perpetually hungry, so it’s a big priority that my meatless meals feature dishes that stick with me. I also have a hard-working husband and two rambunctious boys with crazy appetites. “Hearty” is definitely the word of the day! I love to use ancient grains like quinoa, spelt and chia for easy-to-digest options that provide tons of energy. Protein-packed black beans, chickpeas and leafy vegetables have the nutrients we need in a balanced diet. Here are some of my faves lately:
