I got into a bad cookie habit when I was pregnant with Minion, and I’m trying to get back on-track. New Year’s resolutions and all. I like to indulge a little (okay, a lot) and I’m just trying to adjust those midnight snacks to something that won’t totally wreck my metabolism.
This paleo cake fix take no time at all, it’s perfectly-proportioned for one and it has been one of my go-to sweet tooth recipes for a long time!
- 1 egg (beaten)
- 1 Tbsp almond flour
- 1 Tbsp coconut flour
- 2 Tbsp dark chocolate chips
- 2 Tbsp honey
- 1 tsp vanilla
- Mix ingredients together in a mug and microwave 60-90 seconds. Tada! Cake!
For anyone who’s wondering, the answer is yes…I do shout out, “Tada! Cake” as I’m removing this from the microwave. Of all the times I’ve made this, I’ve never done a full photo shoot of it. You guys know how I usually take photos of the ingredients and the process and the finished product. Truth be told, I’ve only gotten around to snapping a pic of my ready-to-eat bite because it is SO good that I don’t like to screw around. I just want that deliciousness in my belly STAT. But I wanted to share the recipe with you all. So here it is, lacking a bunch of pretty photos.
Valentine’s Day is coming up, and I bet this could be a really nice addition to a homemade meal with your sweetheart…especially if he or she is trying to avoid a bunch of sugar. Or if you don’t have a sweetheart, you can do what I do and gobble it up all by your lonesome while you stream Orange is the New Black on Netflix.
I don’t judge.
Pin it for later!
