We all know that pomegranate is a super fruit. It also pairs well with a fancy meal when you’re looking for the pretty crimson hue and antioxidant power of wine, without the alcohol. This pomegranate drink recipe can be done completely from scratch, or you pick up store bought pomegranate juice and lime juice for an easy concoction.
Sparkling Pomegranate Jubilee
1 pomegranate or 1/2 cup pomegranate juice
3/4 cup sparkling water
1/4 Tbsp lime juice or juice from 1/8 of a lime
If you’re using a fresh pomegranate: slice off the top and bottom, cut the pomegranate into pieces along the pith and pull the pomegranate apart, seeding it by removing the pith from the seeds. Pulse the seeds in a blender to release the juice, and strain the juice into a cup.
Combine the pomegranate juice, sparkling water, and lime juice. Garnish with lime if desired. I like to dip the rim of a glass cup in a bit of water and then sugar the rim. This drink is a bit tart for most kids, so I add a teaspoon or two of sugar directly into the cup if I’m serving it to children.
