My mother-in-law made these appetizers for a family dinner awhile ago and they were a huge hit. Once the picky eaters got over contemplating, “What’s a date? Is it a nut? Is it a vegetable? Why is it squishy?” everyone gobbled them up faster than you could bat an eye.
Prosciutto-Wrapped Stuffed Dates
1/4 cup marscapone
1/4 cup goat cheese
1/4 cup chopped green onion
8 thin slices prosciutto, halved lengthwise
Mix the marscapone, goat cheese and green onion with salt and pepper to taste.
Split the dates and stuff with 1/2 teaspoon cheese mixture.
Wrap prosciutto around each date and secure with a toothpick.
The sweetness of the dates is perfectly offset by the savory taste of the prosciutto. These would be excellent at an Easter brunch!
