Today is Nate's birthday. Happy birthday, Nate! Awesomely, it's also National Sandwich Day. In honor of both, we're making chicken pesto panini (did you know that the plural form of panini is panini? I didn't, until the spellcheck kept highlighting “paninis”).
Chicken Pesto Panini
Bread (we like Oroweat's Healthful Flax & Fiber because it's 80 calories per slice and had 5 grams of protein)
Strips of grilled chicken (you can simply grill chicken breast on the panini press ahead of time)
Generously spread pesto on both sides of the sandwich bread.
Chop up a couple ounces of the goat cheese and top one of the bread slices with it. Don't worry if it gets crumbly. It'll all melt together when you put it in the panini maker.
Add 4 or 5 slices of chicken breast.
Grill it on high on a preheated panini maker for 2 1/2 minutes.
Slice and serve hot.
The panini maker is one of my all-time favorite kitchen items. I even throw quesadillas on there and grill up chicken breasts on it. Honestly, I'm not sure what we'd do without it. We'd probably eat a lot less sandwiches.
