grilled vegetables

Everyone raves about barbecued meat in the summer, but I don't see a lot of people taking advantage of the opportunity to make grilled vegetables! Why pull out any pots and pans inside the kitchen when you can create an entire meal with the magic of your backyard barbecue and a little oil? Here's how it's done in our home.

Grilled Vegetables with a side of Meat!

We tenderize our meat by just throwing it in a bag with some tenderizer and refrigerating it for about an hour.

drizzled red onions

It's helpful to cut the onion rings large and keep them in tact as much as possible for easy grilling.

Don't overheat the avocados or they'll get mushy. 30 seconds is all it takes.

Oma and Opa came over to watch the kids while we went out for our anniversary dinner, so we got everything ready for Opa to man the grill. No babysitter goes unfed in this house! He said that the oil and garlic smothering the steak was the perfect touch.

It really is important to use a good oil to get the strongest flavor to come through when grilling. I love to use Pompeian's grapeseed oil because it has a really high smoke point, so most of the rich flavor is preserved throughout the grilling process. High-quality olive oils such as Pompeian have fewer acids and a higher smoke point than some lower-quality mass-produced oils, so any of the olive oils in their line will work for our quick grilling process if you can't get your hands on the grapeseed that I love so much.
