Night Cereal: Crunchy Ginger-Coconut Lime Chex

Ingredients

  • 5 cups Chex mix
  • 1.5 cups oats
  • 1.5 cups sliced almonds
  • 1.5 cup coconut flakes
  • 6 Tbsp butter
  • 4- inch piece of ginger skin removed and thinly-sliced
  • 2 stalks lemongrass outer leaves removed and inner leaves bruised and thinly-sliced
  • 1/2 tsp cayenne
  • 1 tsp onion powder
  • 3 Tbsp lime juice
  • 1 tbsp honey
  • Dried cilantro for seasoning

Instructions

  • Preheat oven to 275 degrees F.
  • In a large roasting pan, melt butter in the oven.
  • Stir in ginger, lemongrass, cayenne, onion powder, lime juice and honey.
  • Stir in Chex mix, oats, almonds and coconut flakes.
  • Bake for 1 hour, stirring every 15 minutes.
  • Sprinkle with dried cilantro and serve with milk.
