Our family has been missing gluten lately as it used to provide the staple for a lot of quick-and-easy meals in our busy lives: pasta, cereals, sandwiches. But I'm always up for a challenge and I love creating a healthier take on an old favorite! These lunch meat rolls have all the best stuff from a gourmet sandwich. We make a couple different iterations, and kids and adults all gobble them up.

I first saw this at Oma's house and was totally struck my the sheer genius of it. Deli meat + cream cheese = lunch meat rolls. Tasty, finger-friendly morsels of deliciousness and protein. Why didn't I think of that?

Hillshire Farms Naturals line

We're working with Hillshire Farm and I've been using their new Naturals line of lunch meat that doesn't contain any artificial ingredients, preservatives, colors or nitrates. Have you ever actually read the ingredients in most lunch meat? I generally expect to find one thing in my meat. And that's meat. No caramel coloring with a side of sodium nitrite, thankyouverymuch. I've been pretty shocked at the weird fillings and additives in most brands, and I love that Hillshire Farm is providing an option that I don't have to stress over.

Cream Cheese Lunch Meat Rolls

These lunch meat rolls have all the best stuff from a gourmet sandwich. We make a couple different iterations, and kids and adults all gobble them up.

Ingredients

  • One package Hillshire Farm Naturals lunch meat
  • 1/4 cup cream cheese
  • 1 cup spinach
  • 3 Tbsp giardiniera
  • 2 Tbsp mustard

Instructions

  1. Spread one piece of lunch meat down the center with 1/2 to 1 tsp cream cheese.
  2. Top cream cheese with 2-3 spinach leaves.
  3. Top spinach leaves with a couple pinches of gardiniera and a squirt of mustard.
  4. Roll up lunch meat rolls and serve.

Hillshire Farm's Naturals line features four flavors: Slow Roasted Turkey Breast, Hardwood Smoked Turkey Breast, Honey Roasted Ham, and Black Forest Ham. I've tried them all and they're all delicious, with really great taste that means I don't have to drown my food in spices or cover it up with a big hunk of bread. I actually want to taste the meat in this lunch dish, and I'm proud to serve it as the focal point in a meal.

I usually opt for one of the hams for my lunch meat rolls, because it pairs really well with cream cheese.

I skip out on spinach when I'm making this for the boys and serve them lunch meat rolls with just meat and cream cheese, so there's nothing green for them to complain about (heaven forbid). Thank goodness they're currently obsessed with peas and carrot sticks. Gotta get those veggies in one way or another.

For us adults, I opt for an Italian flavor with some giardiniera. Any pickled vegetable adds a nice crunch.

Nate is ALL about the mustard. Standard yellow makes this dish reminiscent of a classic ham sandwich.
