Muffin in a Minute

The other day, my mother-in-law showed me something. Something epic.

“Would you like a muffin with your coffee?” she asked.

“Um, sure?” I make a regular habit of raiding their cabinets every time I enter the house (a hazard of the both fact that I'm always starving from round-the-clock breastfeeding and the fact that Heidi cooks like nobody's business), and I hadn't seen any muffins. How on earth had I missed the muffins?!

And that's when she pulled out a coffee cup and whipped up a muffin. In the microwave. In a minute.

Heidi's Epic Muffin in a Minute
1/4 cup flax meal
1/2 tsp baking powder
1 Tbsp sugar
1 tsp cinnamon
1 egg
1 tsp butter, coconut oil or vegetable oil
1 1/2 Tbsp cream cheese (optional)

Mix the dry ingredients in a coffee cup.

Add the egg and butter or oil. Stir well.

Plop the cream cheese into the cup (no need to stir it or anything) and microwave on high one minute.

Remove from cup (simply tip it over. If it doesn't come loose right away, edge it out with a knife), slice, and serve topped with butter or jam.

Heidi says that this whole “muffin in a minute” thing was started during the low-carb Atkins diet heyday. As you can see, the version she made for me is a little more caloric (although the sugar can easily be replaced with Splenda or Stevia), but still high in fiber.

  1. That is so great!!  I’m going to give it a try tomorrow morning.  I read cookbooks all the time (yes, I’m weird like that….) and I’ve never seen this.  How did I not know about this?  Thanks … I can’t wait to try it!! 

  2. I love this! I make scrambled eggs in a cup all the time and have done “french” toast in a mug, too!

  4. OH MY GOD!  Your mother in law should have a bronzed statue made of herself in the Parthenon! This is so good I wanna slap somebody. Now since I am locarbing I subbed out the sugar for stevia (1/8th tsp). I subbed out 1TBS of flax for almond meal and added vanilla and a scrape of nutmeg. Tomorrow I am going to work in coconut flour and try coconut butter! Lord help me. I did not need another addiction! But thanks! Seriously this is Sublime. Epic. Red Sea parting and what not!

    • Haha thank you Annie! I will definitely pass on the message. I know that she uses stevia and coconut oil in a lot of her recipes as well. Good luck with your low-carb diet!

  5. Ok this is excellent! Just tried it and it turned out great. I even used just egg whites (that’s all I had) and Stevia with a little vanilla extract and SO GOOD. Thanks for sharing! ^_^
