Paleo Tuna Bell Peppers and No Mayo Tuna Salad

Tuna on its own is paleo, obviously. Tuna usually requires a little dressing up, though. Here is the best way to serve paleo tuna – without a bunch of unhealthy ingredients.

When I initially went paleo awhile back, I was seriously sad about missing out on my regular tuna salad sandwich lunches. Bread was out of the question, as was mayo, and I had to relearn how to healthfully cook the things I love. I'm so glad I did it, though, because I've discovered a whole new menu of delicious items! Healthy entrees like No Mayo Tuna Salad and Paleo Tuna Bell Peppers now make up my everyday meals. I'm focused on natural foods that help my body thrive and I've really stepped my cuisine up a notch in a way that makes me proud. Here are a couple of my new favorite ways to prepare paleo tuna.

Paleo Tuna Bell Peppers and No Mayo Tuna Salad

Here are a couple of my new favorite ways to prepare paleo tuna.

Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes

Ingredients

  • 3 cans Ocean Naturals tuna, drained
  • 1 sweet yellow onion, diced
  • 1/4 white onion, diced
  • 2 Tbsp dried basil
  • 2 Tbsp dried red chili
  • 1 garlic clove, minced
  • 1/8 cup lemon juice
  • 1/8 cup extra virgin olive oil
  • 4 bell peppers, assorted colors
  • Salt and pepper, to taste

Instructions

  1. Saute the onion over medium-high until they're soft, translucent and beginning to brown. Season to taste with salt and pepper.
  2. Mix onions with tuna, basil, lemon juice and olive oil.
  3. For paleo tuna bell peppers, slice bell peppers in half lengthwise, remove seeds and membranes and fill with no mayo tuna mixture before serving as-is or baking for 15 minutes at 350 degrees.
