The busiest season of the year is rapidly setting in on us. I have a jillion things to get done before baby number three shows up in December! Lately I've been ALL about easy, hearty meals that I can prepare quickly without a ton of dishes. Gluten-free breakfast casseroles have long been a favorite go-to solution for our family. I've been making them in bulk and serving them for dinner, too.

Gluten-free breakfast casseroles are simpler than casseroles used for other meals, because eggs make for an easy base in place of breadcrumbs or flour that is often relied on for lunch or dinner. A lot of these use cheese for taste and consistency, but it can be subbed out for our dairy-free friends. There are even some oatmeal and quinoa-based gluten-free breakfast casserole options. They offer a satisfying crunch without wheat. Sometimes I want something a little sweet, and these fruity options make a healthy choice that can replace the usual meal-and-dessert combo. Another awesome thing about gluten-free breakfast casseroles is that it is really easy to incorporate veggies. Onions, mushrooms, bells peppers, tomatoes. You can even add an ethnic slant – from the typical Mexican huevos rancheros to an Indian curry – with the addition of just a few spices.
