Sweet breakfast confections featuring ice cream have been all the rage lately, from ice cream croissants to delectable donut holes and melty muffin bites. Here's how our family puts a new twist on another breakfast classic with ice cream waffle sandwiches.
These could easily be breakfast OR dessert, but let's not argue semantics!
We're partnering with Dreyer's for a series of posts (they're also known as Edy's for all you people east of the Rockies), and their Slow Churned® Simple Recipes Caramel Delight flavor is perfect for these ice cream waffle sandwiches. The new line of light ice cream has real ingredients like fresh cream and milk with no RBST, artificial colors or flavors. It's blended together to make the most perfectly smooth, buttery-mouthfeel ice cream that you could possibly hope to discover between two fluffy waffles. All of that with half the fat and one-third fewer calories of full-fat ice cream!
All you need is two waffles that have been toasted and cooled, a big scoopful or two of Dreyer's Slow Churned® Simple Recipes Caramel Delight light ice cream, some thick caramel topping and crushed candied pecans. Spoon the ice cream in between the waffles, slice in half, dip the cut end into the caramel sauce and then roll it in the crushed nuts.

Have some wax paper to set these on. These ice cream waffle sandwiches can be a little messy! Stash them in the freezer to firm up for a few hours, and then bring them out for delighted kids or guests.
