We actually cook up a big batch of quinoa each week for our salads and sides. It's a huge time-saver and an easy way to add a burst of protein to just about any meal.
Our whole family's also pretty darn obsessed with pomegranate arils at the moment. They bring SO much flavor, and they're pretty widely available in those freshly-packed cups so there's no need to sit around attempting to “peel” a pomegranate anymore.

Pomegranate Parfait
If you haven't tried mixing quinoa with your yogurt situation yet, you're doing breakfast wrong. Don't worry, though, this pomegranate parfait will get you up to speed in no time!
Ingredients
- 1 cup cooked quinoa
- 2 1/2 cups vanilla Greek yogurt
- 1 cup pomegranate arils
- 3 Tbsp honey
- 1 tsp almond slivers
Instructions
- Evenly layer 1/2 cup yogurt to the bottom of a jar.
- Top with 2 tablespoons quinoa.
- Add 1/4 cup pomegranate seeds.
- Add 1/2 tablespoon of honey.
- Continue the layering process one more time.
- Top with slivered almonds.

I was thinking about it as I whipped this up, and I'm pretty sure I've made a meal of each of these ingredients individually at some point or other. I've definitely spooned out a bowl of yogurt by itself to go with some coffee, and I've for sure eaten those Pom Poms straight out of the cup. Quinoa on its own in the microwave is a quick way to squeeze in some protein, and I've definitely licked the spoon after making peanut butter and honey sandwiches for the kids in the morning and called it a day.
Clearly, not every breakfast that I make is quite this tenderly prepared. If all these ingredients are sufficient on their own, though, I must say that they're absolutely divine when they all meld together for a few minutes. The pomegranate arils impart a sweetness to the crunchy, engaging texture of the quinoa, and the slivered almonds add just the right amount of crunch. Meanwhile, the tartness of Greek yogurt finishes it all off with just the right amount of tang. If you were feeling really decadent, I bet you could even simmer down some of the pomegranate arils into a syrup to spoon on top of the whole thing. Since the tartness of Greek yogurt can be a bit much for kiddos, a little extra sweetness could be just the thing to balance it out for them.
Overall, this pomegranate parfait is downright perfect. Best of all, if you pre-cook the quinoa you can quickly scoop and serve this in minutes, without even having to turn on the stove in the morning!
