I got into a bad cookie habit when I was pregnant with Minion, and I'm trying to get back on-track. New Year's resolutions and all. I like to indulge a little (okay, a lot) and I'm just trying to adjust those midnight snacks to something that won't totally wreck my metabolism.
This paleo cake fix take no time at all, it's perfectly-proportioned for one and it has been one of my go-to sweet tooth recipes for a long time!

For anyone who's wondering, the answer is yes…I do shout out, “Tada! Cake” as I'm removing this from the microwave. Of all the times I've made this, I've never done a full photo shoot of it. You guys know how I usually take photos of the ingredients and the process and the finished product. Truth be told, I've only gotten around to snapping a pic of my ready-to-eat bite because it is SO good that I don't like to screw around. I just want that deliciousness in my belly STAT. But I wanted to share the recipe with you all. So here it is, lacking a bunch of pretty photos.
Valentine's Day is coming up, and I bet this could be a really nice addition to a homemade meal with your sweetheart…especially if he or she is trying to avoid a bunch of sugar. Or if you don't have a sweetheart, you can do what I do and gobble it up all by your lonesome while you stream Orange is the New Black on Netflix.
I don't judge.
Pin it for later!
